It’s Fish Friday For Cod’s Sake! Cod Fish Friday Recipe

So I went by Mr. Fish Fish Market in Myrtle Beach South Carolina this Am on the way home from a work call, I got 2 Lb of Cod Fish, I searched for recipes, I found a great looking one, then I made a dish based on the one I found. I all it Cod Fish Friday. Sides were Fresh Broccoli, Koaded potato skins, and hushpuppies.

INGREDIENTS
2 tablespoons grape seed oil, or olive oil
2 garlic cloves, thinly sliced
3/4 teaspoon Smoked Papriki or ½ teaspoon crushed red pepper flakes.
1/4 teaspoon white pepper
1 teaspoon hulled hemp seed
Dash of Cayanne Pepper
1 14.5-ounce can diced peeled tomatoes, drained
¼ cup dry white wine
1/4 cup fresh spinach
2 bay leaves
2 Sprigs Thyme
Sea salt and freshly ground black pepper
4 5-ounce skinless cod fillets

Heat oil in a medium skillet over medium heat. Add garlic Papriki or ½ teaspoon crushed red pepper flakes, white pepper, hemp seed, Dash of Cayanne Pepper and cook, stirring often, until fragrant (garlic should not take change any color), under 3 minutes.

Add tomatoes, crushing with your hands as you add them, wine, bay leaves, spinach, thyme, and ½ cup water. Bring to a boil, reduce heat, and simmer as the flavors meld, 5 minutes; season with salt and pepper.

Reduce heat to medium-low; season cod with salt and pepper and place in skillet. Cover and cook at a bare simmer, Flip once, until cod is opaque throughout and beginning to flake, 5–8 minutes “thicker pieces will take longer to cook”.
