As I reminisce about my childhood, one of my fondest memories is of a delicious pie my Aunt Linda made. The pie was a Soda Cracker Crust, with fresh Strawberry on top Pie, and it was absolutely heavenly.
My Aunt Linda was an excellent cook and had many great dessert recipes up her sleeve. She was always experimenting with new ingredients and techniques, and her creations were always a hit with everyone who tried them.
The Soda Cracker Crust, with fresh Strawberry on top Pie was no exception. The crust was made from crushed soda crackers, stiffly beaten egg whites, nuts and sugar to create a sweet and crunchy base. The fresh strawberries were then arranged on top of the crust and covered with a sweet glaze, or whipped topping, that added just the right amount of sweetness to the pie.
The combination of the lite crisp crust and the juicy strawberries was simply divine. The pie was the perfect balance of sweet and tart, and the flavors and textures complemented each other perfectly.
As I savored each bite of the pie, I couldn’t help but appreciate my Aunt Linda’s culinary skills. Her desserts were always a work of art, and this Soda Cracker Crust, with fresh Strawberry on top Pie was no exception.
Thinking back on that pie now, I’m grateful for the memories it brings back. It reminds me of happy times spent with my family and the joy that comes from sharing a delicious meal with loved ones. And although I may not be able to enjoy that particular pie again, the memory of it will always hold a special place in my heart.

Crust:
3 stiffly beaten egg whites
1 C sugar
12 finely rolled Saltines
½ t baking powder
1 t vanilla
½ C chopped nuts (almonds, walnuts or pecans)
Filling:
A pint and a half of sliced strawberries or 4-5 sliced peaches
Topping:
1 pint heavy cream, whipped
¼ C powdered sugar
- egg whites
- granulated sugar
- vanilla extract
- saltine crackers
- baking powder
- chopped pecans (or not!)
- sliced fresh strawberries (or other fresh berries or fruit)
- heavy whipping cream
