Shrimp & Grits
Grits
- Double the liquid
- If the package calls for 1 cup water, use:
- ½ cup chicken broth (or water)
- ½ cup milk
- ½ cup half-and-half or cream
- Cook grits low and slow for an extra-long time, stirring often
- Add cream cheese to taste
- Add extra butter if desired
- Add heavy whipping cream as needed
- Salt to taste
Shrimp
- Brown ½ roll Jimmy Dean sausage (turkey preferred)
- Add ½ stick butter
- Add garlic or onion or bell pepper
- Add ¼ can Campbell’s Beef Mushroom Soup and mix in
- Add shrimp and cook just until done
Serve shrimp mixture over the long-cooked, creamy grits.
Hush Puppies
Ingredients
- 1 cup cornmeal
- ¼ cup all-purpose flour
- ¼ tsp baking soda
- ¾ tsp baking powder
- 2 tbsp sugar
- 1 egg
Directions
- Mix dry ingredients in one bowl.
- Mix the egg in another bowl, then add dry ingredients to wet and stir to combine.
- Drop batter into hot oil and fry until golden brown.
