Shrimp and grits with hush puppies

Shrimp & Grits

Grits

  • Double the liquid
  • If the package calls for 1 cup water, use:
    • ½ cup chicken broth (or water)
    • ½ cup milk
    • ½ cup half-and-half or cream
  • Cook grits low and slow for an extra-long time, stirring often
  • Add cream cheese to taste
  • Add extra butter if desired
  • Add heavy whipping cream as needed
  • Salt to taste

Shrimp

  • Brown ½ roll Jimmy Dean sausage (turkey preferred)
  • Add ½ stick butter
  • Add garlic or onion or bell pepper
  • Add ¼ can Campbell’s Beef Mushroom Soup and mix in
  • Add shrimp and cook just until done

Serve shrimp mixture over the long-cooked, creamy grits.


Hush Puppies

Ingredients

  • 1 cup cornmeal
  • ¼ cup all-purpose flour
  • ¼ tsp baking soda
  • ¾ tsp baking powder
  • 2 tbsp sugar
  • 1 egg

Directions

  1. Mix dry ingredients in one bowl.
  2. Mix the egg in another bowl, then add dry ingredients to wet and stir to combine.
  3. Drop batter into hot oil and fry until golden brown.
