12 large sea scallops Mine were fresh from Seven Seas Seafood Market
some nice thick bacon
few dashes soy sauce
few dashes worchestier
1/2 teaspoon sesme oil toasted
slap your mama cajun seasoning
preheat to 475
mix all but scallops, cheese, and bacon in a bowl mix well, add scallops mix well
to coat scallops, let stand 10 minutes
now wrap w bacon one layer not double its hard to get it done. use toothpick to hold bacon
place on shallow pan, put in oven, turn to broil approx 7 minutes take out and flip each scallop,sprinkle small amount of a hard cheese on top, like parm., return to oven for approx 7 minutes, until bacon cooked brown.
“i broil for last two minutes for the sizzle crisp!”
Remove from the oven, carefully remove toothpicks and serve

1 cup good quality mayonnaise
1/4 cup hot chili paste (recommended: Sriracha Hot Chili Paste)
1 lime, juiced
2 tablespoons chopped cilantro, plus more for garnish
combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use.
