Cube Steak & Brown Gravy in the Instant Pot

Hey Y’all this is what i made for dinner tonight it was fantastic, so tender! i will be doing it again!

Cube steak is a cut of beef, usually top round or top sirloin, tenderized and flattened by pounding with a meat tenderizer, or by using an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). This is the most common cut of meat used for the American dish chicken fried steak.

INGREDIENTS
Grape or olive oil as needed to brown meat mushrooms & onion.
2 lbs of cube steak, cut in serving size portions.
1 onion, chopped.
1 teaspoon each of salt and pepper.
1/2 teaspoon white pepper.
6 tablespoons of flour.
2 1/4 cups of beef broth.
2 cloves of minced garlic.
1/8 teaspoon of Smoked Paprika.
1 tsp Kitchen Bouquet.
2 cups sliced fresh Mushrooms (optional)
a few drops of Liquid Smoke.
3 dashes of soy sauce.
2 dashes of Worchestire sauce.
3 tablespoons of Marsala wine or cooking wine.
2 cups sliced fresh Mushrooms (optional)
1/8 teaspoon of cayenne pepper. (optional)

DIRECTIONS
Add the flour and salt, both peppers, and cayenne, paprika to a ziplock bag. Toss it about a bit to combine. Add the meat to the bag. Shake it well to coat the meat with the flour. “Save the flour that is left in the bag, you’ll need it later.”

Heat some oil few tablespoons, in your pressure cooker and brown the meat on both sides, in batches. so the meat does not touch while browning”.

Once the meat is browned, remove to a empty plate to rest and catch juices, while you brown veggies, “yes red juice will be coming out of the steak”. “

you can add a small bit of beef broth to the pot to deglaze” keep the brown bits in there. Add your onions and sauté to your liking. Add garlic, mushrooms and sauté for a couple of minutes.

Add the broth, soy sauce, liquid smoke, wine, Worchestire, Kitchen Bouquet, add the remaining flour from the bag evenly and stir mix well, add your meat to the pot, juice and all.

Set pressure to high for 18 minutes. After it’s done, slow release the pressure.
