Southern Creamy Oyster Soup/Stew & a single-serve KETO method

Oyster Stew

1 pint shucked oysters in their liquid
4-6 tablespoons butter
1-2 shallots, minced
1 small garlic clove minced
fresh ground black pepper to taste
Salt to taste
4 cups of milk
2 cups heavy cream
2 to 3 drops Hot sauce (Tabasco Franks, etc.), to taste

  --  You can add  Fennel bulb, corn, shrimp, potato, Mace, Sherry, Parsley,  etc. (optional) 
-- Finish with Sherry & a Pinch of cayenne pepper (optional)
--Serve With Oyster crackers & Extra butter (optional)

-- Cook, soften, or brown shallots in butter, add Garlic(optional) 
 --Season with salt and pepper 
--Add Cream and Milk bring to boil and serve

My Single-serve Keto version with cheese.
I put Tablespoon of butter in pan, i added shallotts, cooked till brown a little,
added 1/2 cup of Heavy whipping cream, 1/2 cup of water, (you can use stock or broth) ,
season, peper, salt, cayanne, add oysters, bring to simmer,
i added some bacon chedder cheese, and some parsley, and served
